Our honey test results show it’s primarily tallow and tupelo honey. The tupelo adds a smooth, rich balance to what would otherwise be a stronger, mostly tallow flavor—making it uniquely delicious and full of local character.
Southeast Texas Honey Characteristics
Southeast Texas honey ranges from golden to dark amber, with a rich, floral flavor that varies by season and bloom—tallow, privet, vervain, or in our case, tupelo! Some batches (vary by year) are citrusy, others warm and slightly spicy, and some bold and robust. But ALL very delicious!
When sold raw and unfiltered (like ours), it preserves natural enzymes, vitamins, and antioxidants. Slight cloudiness or crystallization is natural and can be gently reversed by warming to 120°F.
